My new cookbook, The Korean Vegan by Joanne Lee Molinaro arrived, yet I’m still pouring through the introduction on how to build a Korean pantry, and trying to decide on what recipes to begin to make. The cookbook is beautiful, so many wonderful stories about her family.

I’m glad I didn’t have the Korean Gochugaru chili pepper…yet lol
Spicy!! I warned my Mom not to add more crushed red pepper. Super delicious, easy, spicy, and baking the extra firm tofu was a level up! Costco brand extra firm is a great deal for 4 – 16oz pack, especially for recipes like this. I normally buy the House Foods Firm 4-16oz pack, which is great for my “Egg-less” Salad or most recipes.
It was suggested to have with white rice, yet I had extra wild rice on hand, plus made while the tofu baked, the quick slaw below, which was a perfect crunch, sweet, slightly spicy side.

This slaw is QUICK and since I used Napa Cabbage from H-Mart, it was very kimchi-like in its flavors and texture. So good!
Napa Cabbage is a great source of ALL the following:
